Make a holiday favorite memorable

Alright now, don’t even get me started about that Bama game.

I thought I was going to pass slap out. I love my Crimson Tide almost as much as I love my family, but I sure hope we get our act together and quick.

You know, Thanksgiving is around the corner and I have so many wonderful people in my life to be thankful for. This is such a wonderful opportunity to share in fellowship with friends and family.

This is probably my favorite holiday. Food has so many different meanings to people, but it always brings people together. Think about it: Pretty much every gathering planned has a menu. Thanksgiving to me is a day to show your appreciation to family, friends and help those in need.

Turkey is something that everyone is going to partake in. The trimmings will vary from sweet potato soufflé’ to mac and cheese, and of course deviled eggs.

You can’t have Thanksgiving without deviled eggs. I have to say I have one heck of a sweet tooth.

I love the dessert section of a buffet. I always seek out pecan pie. You can do so many different variations of it. Below is a simple recipe.

I’m sure most of you use this recipe, but I’ll add a little twist to it at the end that you can experiment with.

1 c. sugar

1/2 c. corn syrup

1/4 c. butter, melted

3 eggs, well beaten

1 c. or more pecan halves

1 unbaked 9-inch pie shell

Mix sugar, syrup and butter; add eggs and pecans. Fill unbaked pie shell with mixture and bake in moderately hot oven (400 degrees) for 10 minutes. Reduce heat to 350 degrees and continue to bake for 35 minutes or until done.

My friend Holli couldn’t find light corn syrup so she used the dark, and I tell ya it put a little “zing” to the pie.

It was probably one of the best pies I have had in a long long time. Also, if you are a chocolate lover, put a few chocolate morsels in the pie before baking, you’d be surprised at the different taste you get with something so simple added.

I also love caramel, so I just take a few pieces of caramel and cut them up in small pieces and put in the bottom of the pie before baking.

It’s absolutely fabulous! Just go to your local grocers and walk down the candy isle. Look for soft candies that are in the chocolate and caramel range and grab a bag. I wonder what a cut up snicker bar would taste like in a pecan pie? The ideas are endless!
