Turkey salad – Keep those leftovers

It’s hard to decide what to do with the Thanksgiving leftovers. You don’t want to waste the food, but you also know you’re not likely going to eat it like it is currently. Why not look into new recipes you can make with your leftover turkey and dressing?

 My mom likes to use the leftover turkey to make turkey salad that she and my dad enjoy. It is simple to make and will provide you and your family with an easy snack in the days after Thanksgiving. Plus, it means you’re not wasting food by throwing it out or letting it go bad in the refrigerator.

 The following turkey salad recipe is the one my mom uses. Give it a try and see if you like it.

 Ingredients

  • 2 cups of chopped turkey
  • 1 stalk of celery (chopped)
  • ¼ cup of chopped green onions
  • 2 boiled eggs (chopped)
  • ½ cup of mayonnaise
  • 2 teaspoons of mustard
  • 2 tablespoons of sweet salad cubes (pickles)

 Preparation

Mix all the ingredients together. A dash of salt may be added according to taste. Make sure to chill in the refrigerator before serving. Serve on top of mixed salad greens with crackers, or serve on croissants, rolls, or bread with chips on the side.
