Hamburger Dinner – A new family favorite

I was originally going to write about Pecan Pie Mini Muffins for this week’s column, but I found something else that caught my attention more. This week’s hamburger dinner recipe is one I’ve never had before, but the ingredients alone make me want to try it.

It’s a dish that could easily become a family favorite as many people love a well-seasoned meal with hamburger as its main meat. I asked my mom if she had ever had this particular meal before, and she said no, but I think she might be considering making it fairly soon. The ingredients are relatively inexpensive, with the ground beef likely being the most expensive.

Ingredients

  • 1 pound of hamburger meat (ground beef)
  • 3 tablespoons of shortening
  • 1 teaspoon of chili powder
  • ½ cup of uncooked rice
  • ¼ teaspoon of pepper
  • 2 large onions, sliced
  • 2 cups of canned tomatoes
  • 2 green peppers, chopped
  • 1 teaspoon of salt

Preparation

Cook the onions and green pepper in the shortening. After the onions are yellow, add hamburger meat and saute until mixture falls apart. Then add the tomatoes, rice, and seasoning. Arrange them in a casserole and bake in a moderately hot oven, or 350 degrees, for 45 minutes or until done.

This is a fairly large dish that serves around six to eight people. It is simple to prepare and is easy on the budget.
